It is a “baked” cookie – a moist dough with a hint of lemon flavor and a very sweet butter on top.
Can I buy the recipe? Sorry, sorry, that recipe has now been taken down. This is because it was not the right kind of cookie. We tried several recipes using cookies from our local grocery store (they do great products), but they were all too dry and crumbly. We decided to try our hand at making our own recipe, which we found very easy and delicious.
How does the recipe work? There is a “cookie dough” ingredient called “butterscotch oil”. We combined 2 tablespoons of butter and 1 cup of butterscotch oil in this recipe, then let it set for 4-6 hours, then removed it from the fridge for a few hours to let it get all sweetened up. In the meantime, we used a little “butter” and a whole egg. If you don’t want to use full-fat butter, you can use a more light-colored butter like unsalted butter or unsalted organic coconut, which is good, but not ideal. Then, to make “butterscotch” oil, we simply cut up the coconut and put it into a food processor with the remaining butter or butterscotch oil. We’ve had some good results with this, but if you can’t use full-fat butter, you might need to reduce the amounts of the coconut and the butterscotch oil you use for the recipes below. (We tested out using half-coconut, which works much better.)
How much filling do the cookies come out with? When you bake a cookie, you need 2 ½ cups of the finished cookie dough. Then, you add another ½ cup flour. Next, you pour or stir in some more butterscotch oil. Lastly, you sprinkle some of that sweet butter, egg, and syrup on top of the cookie. We like to add that extra liquid so the cookies are a little more moist. It is very similar to a brownie batter with a bit more caramel in it, to our taste.
Will the cookies get brown? Yes! This is because the oil that goes into making the cookies starts the browning process – butterscotch oil and butter do not get evenly mixed together when they are baked!
